White Wine Chicken

You’ve never had chicken like this before. This white wine vinegar chicken recipe is so easy and tastes amazing. It’s the perfect meal for any night of the week, but especially on those busy days when you need something quick and delicious. The Champagne wine vinegar adds an extra layer of flavor to this dish and will have your guests coming back for more.

Ingredients:

Instructions:

  • 1 hour before cooking, generously salt and pepper the chicken breast.
  • When ready to cook, heat Dutch oven or cast-iron skillet to medium heat and coat the bottom of pan with butter olive oil.
  • Place flour in shallow pan or plate and season with salt and pepper. Dredge chicken in flour and place skin side down (if yours has skin), in hot skillet.
  • Brown both sides about 4 minutes each side.
  • Remove from skillet and place on parchment lined sheet.
  • Wipe out skillet with paper towel and return to heat.
  • Add 3 TBSP butter olive oil and onions to pan, season with salt and cook, stirring occasionally until onions are tender about 15 minutes.
  • Increase heat, add white wine and Champagne wine vinegar. Scrape the brown bits from bottom of pan. Add the oregano and stir.
  • Return the chicken to the pan, lower heat to simmer and cover with the lid vented. Cook for about 12 minutes, tasting and adjusting salt about halfway through. If you’re using dark meat, let it cook about 20 minutes.
  • Transfer chicken to serving platter and spoon remaining sauce in pan over chicken breast, or spoon liquid over chicken and use the hot skillet as a serving platter.
