Chili'd Sweet Potatoes with Homemade Ranch (vegan option)

Ingredients
- 2 Sweet potatoes cut in 8 wedges each
- 2 TBSP Squizito spicy oil ( Harissa, or Baklouti Green Chili) or not spicy (Persian Lime)
- 1 TBSP Hill Country Chili Powder
- 1 TBSP Dried Thyme
- Salt & Pepper to taste
Ranch Dipping Sauce
- 1/4 cup mayonnaise or (vegan-vegannaise)
- 2 TSP fresh lemon juice
- 1/2 TSP garlic powder
- 1/2 TSP salt
- 1/2 TSP pepper
- 1 TSP Dried parsley
Instructions:
- Preheat oven to 400 degrees
- In large bowl, toss potato wedges in olive oil, chili powder, thyme, salt and pepper
- Spread on baking sheet covered in parchment paper in single layer
- Bake 10-12 minutes until edges are crispy
Instructions for Ranch:
- For Ranch Dipping Sauce simply stir ingredients until well mixed.
