Spicy Lime Sweet Potatoes

Ingredients:

  • 1 Tbsp. of Squizito Persian Lime Olive Oil
  • 2 Sweet Potatoes (or 1 Butternut Squash)
  • 1 Shallot or Small Onion
  • 1 Poblano Pepper
  • 4 oz. of Cherry Tomatoes
  • 1 Bunch of Cilantro
  • 1 Lime

Instructions:

  1. Preheat oven to 400°F
  2. Peel sweet potato, then cut into half inch cubes.
  3. Peel and have shallot, cut halves into quarters.
  4. Chop cilantro finely.
  5. Cut lime and tomatoes into halves.
  6. Core and seed poblano then cut into half inch squares
  7. In medium bowl toss (sweet potatoes, poblano, and shallot in lime olive oil and salt and pepper) then spread on baking sheet.
  8. Roast in oven until browned and slightly crispy, 20 to 25 minutes, tossing halfway through.
  9. Once cooked transfer to a serving bowl and toss with tomatoes, cilantro and a lime juice. Season with salt and pepper (optional) and serve
