Spicy Lime Sweet Potatoes

Ingredients:
- 1 Tbsp. of Squizito Persian Lime Olive Oil
- 2 Sweet Potatoes (or 1 Butternut Squash)
- 1 Shallot or Small Onion
- 1 Poblano Pepper
- 4 oz. of Cherry Tomatoes
- 1 Bunch of Cilantro
- 1 Lime
Instructions:
- Preheat oven to 400°F
- Peel sweet potato, then cut into half inch cubes.
- Peel and have shallot, cut halves into quarters.
- Chop cilantro finely.
- Cut lime and tomatoes into halves.
- Core and seed poblano then cut into half inch squares
- In medium bowl toss (sweet potatoes, poblano, and shallot in lime olive oil and salt and pepper) then spread on baking sheet.
- Roast in oven until browned and slightly crispy, 20 to 25 minutes, tossing halfway through.
- Once cooked transfer to a serving bowl and toss with tomatoes, cilantro and a lime juice. Season with salt and pepper (optional) and serve
